Rosebud Veggie Tarts (with Egg Muffins)

Last night’s menu was therapeutic as if it were an art project with hand-folding techniques. Orange, purple, and yellow carrots as well as zucchini all did well in bringing in so much color and life into these little rosebud “spirals”! So pretty! Definitely recommend a wide Potato Peeler to peel off wider pieces, the bigger the easier it is to wrap each rosebud. Microwaving the pieces for a minute will soften and make easier.

* Low calorie tricks:

  • eggs and tofu in lieu of ricotta, mozzarella, and parmesan cheese filling
  • low sodium corn/tomato/spinach tortilla or whole wheat wraps in lieu of carb-olicious puff pastry pie crust
