Skinny Almond Joy Coco-Nutty Cookies

What a fun, easy, under 30 minute past time in making your kitchen smell very coco-nutty and chocolate-icious! I wanted to experience the aromas and richness of a chocolate coconut Macaroon. This is my dad’s all time fave, thus Father’s Day is around the corner!

Skinny-wise, egg whites and a sugar-free substitute such as stevia work very well. For each firecracker ball, I squeezed each one quickly with some almond flour to give it some mass and shape, since they break super-easily.
