Sweet Potato Stack

Sometimes, the best results come from unplanned plans! I was clearing out my fridge before leaving town, and decided to whip up a vegetarian summer plate. This plating began with a sweet potato stack at the center point of the dish and topped off with a few sprinkles of grain rice, scallions, black sesame seeds, and two dill sprigs crossing over each other.

This design was so much fun that I kept experimenting and building around the stack. I laid down pieces of wide, steamed cucumber ribbons, all laying outward in a circular fashion, topped with black sesame seeds. Lastly, I added a few dark cucumber skin ribbons on top the wider ribbons and weave them in a final circular direction.

Once you break down the volcano with a fork, the overall taste is amazing!
